Spiced Apple Whole Wheat Buttermilk Waffles with Maple Apple Compote

Nothing says Fall more than a visit to your local apple orchard with your nearest and dearest, but what do you do with all of them apples once you get home? Here is a delicious recipe for a healthier waffle that is as fabulous as it is made fresh for brunch, as it is defrosted in the toaster for a quick grab-n-go weekday breakfast.

I used spartan apples, but you can use any of your favourite varieties. For the oil in the batter, I used melted coconut oil, but feel free to sub in canola or vegetable oil. I do recommend brushing your waffle iron with real butter, however, as it adds a rich flavour to the finished product that cannot be achieved with cooking spray.

These waffles are delish with regular maple syrup but if you’re serving them for a more indulgent weekend brunch, try topping them with the buttery maple apple compote for an extra treat!

 

Spiced Apple Whole Wheat Buttermilk Waffles with Maple Apple Compote

 

Waffles:

2 cups buttermilk

2 eggs

2 ½ cups whole wheat flour

1 tablespoon baking powder

¼ teaspoon salt

2 teaspoons ground cinnamon

1 teaspoon allspice

1 teaspoon ground ginger

1 cup grated fresh apple

3 tablespoons brown sugar

2 tablespoon of melted coconut oil

2 tbsp metled butter

 

Compote:

1.4 cup butter

2 cups quartered and sliced apples

3/4 cup pure maple syrup

Dash of cinnamon

 

1. Grate your apple with the skin on into a bowl. Depending on the size, you’ll need 1-2 apples. Stir in the brown sugar and let marinate.
2. Preheat your waffle iron.
3. In large mixing bowl, whisk together flour, baking powder, salt, cinnamon, allspice, ginger and nutmeg.
4. In a medium sized bowl, whisk buttermilk, eggs and oil together until combined.
5. Slowly add milk mixture into the dry ingredients and whisk until just combined and large lumps disappear.
6. Stir in apple and sugar mixture into batter until combined.
7. Apply melted butter to both sides of the waffle iron with a pastry brush to prevent sticking and spoon in batter. Cook the waffles to your preference as per your waffle maker’s instructions, and lay the finished waffles in a single layer on a baking sheet in a low temperature oven to keep warm. Repeat until batter is done.
8. To prepare compote, heat a large skillet over medium heat. Melt butter in pan and add apple slices. Sauté 5-8 minutes or until tender.
9. Stir in maple syrup and cinnamon into cooked apple mixture until it’s heated through.
10. Serve waffles warm topped with compote.
