Spiced Apple Whole Wheat Buttermilk Waffles with Maple Apple Compote

Nothing says Fall more than a visit to your local apple orchard with your nearest and dearest, but what do you do with all of them apples once you get home? Here is a delicious recipe for a healthier waffle that is as fabulous as it is made fresh for brunch, as it is defrosted in the toaster for a quick grab-n-go weekday breakfast.

I used spartan apples, but you can use any of your favourite varieties. For the oil in the batter, I used melted coconut oil, but feel free to sub in canola or vegetable oil.
