Elderflower, Grapefruit and Mint Cocktail
One of my favourite additions to my home bar over the past couple of years has been St-Germain Elderflower Liqueur. I’ve always been a fan of elderflower soda, and love being able to transfer the same sweet floral notes to cocktails to give them that little je ne sais quois. It doesn’t hurt that the bottle’s sculptural deco shape and black and gold label make it a gorgeous addition to any bar cart!
In this refreshing cocktail, I’ve blended St-Germaine with Dillon’s gin, freshly squeezed grapefruit juice, a hint of lime, mint leaves and Belvoir’s Elderflower Presse, which results in a delicious blend of summer flavours.

Heirloom Tomato Salad with Anchovy Shallot Vinaigrette
Work has been busier than ever and my home cooking has been lacking lately as a result, but this salad is all about enjoying fresh summer flavours in an easy way. You don’t even need a food processor for the dressing as long as you have a sharp chef’s knife to mince the garlic and anchovies and chop the shallots.
Use whatever herbs you have handy, I particularly love a mix of parsley and basil as a crisp foil to the anchovy vinaigrette.
Using a different coloured tomatoes will make for the best presentation, so take advantage of the gorgeous varieties of heirloom tomatoes available right now.
